What do you do when you get a last minute phone call to work the kitchen for a private dinner? YOU GO! That’s exactly what I did Monday night where I had the opportunity to work the expo line assisting the acclaimed Chef Daryl Shular, CMC. Owner of the Shular Institute, Chef Shular hosted an exclusive fundraiser dinner with influential Atlantans to raise money for his innovative culinary school.
There were several noteworthy dishes, including slow roasted and smoked short rib with potato-cauliflower fritter (SOO GOOD!) and Tanzanian dark chocolate cremeux. One of my favorites was the hush puppies – Chef took it to another level of texture and flavor with sweet corn kernels and drizzled with buckwheat honey. You just had to be there!
The most impressive part was that his apprentices were high school students, yes HIGH SCHOOL. That’s the unique part about the Shular Institute. Chef Shular is dedicated to empowering the next generation, providing opportunities that build skill and confidence for our youth. This community based program aims to provide students with the tactical training and business skills with a goal to graduate with little to no debt; giving future hospitality professionals the financial freedom to pursue their dreams.
